A majonéz vegán változatában a tojást többféleképpen is tudjuk pótolni. Van lehetőség csicseriborsó-konzerv levével (aquafaba) is dolgozni, mint tojáshelyettesítő.
Az aquafaba tökéletesen jó tojásfehérje helyettesítésre, ugyanis kemény habbá verhető. Emiatt használhatjuk sütemények készítéshez is, mint például egy csokoládé mousse elkészítésében.
Hozzávalók 750 ml majonézhez:
- 200 ml aquafaba
- 500 ml olaj
- 1 evőknaál ciscseriborsó
- 1 evőkanál mustár
- 1 evőkanál almaecet/ rizsecet
- 1 teáskanál
- bors
Helyezzük az aquafabát, a citromlevet, a sót és a borsot egy mérőedénybe. Kezdjük el a turmixolást, miközben lassan öntsük bele az olívaolajat. Addig turmixoljuk, amíg szép és sűrű nem lesz. Hűtőben tároljuk, amíg szükséges, 3-4 napig eláll hűtőben.
Ízesíthetjük zúzott fokhagymával, kis vegán pestót is tehetünk az elkészített majonézbe.
