Gluténmentes péksütemények elkészítése során a legfőbb alapanyagok közé tartozik a rizsliszt, diétás étkezésben elsődlegesen zabpehelyliszt használatát javasolják.
Ebben a receptben mindkét liszt felhasználásra került, és a tojás és tejtermékek is mellőzésre kerülnek. A cukormentes verzióban is készíthetjük.
Hozzávalók:
- 160g zabpehelyliszt
- 160g rizsliszt/ barna rizsliszt
- 18g útifűmaghéj
- 150g langyos víz
- 20g friss élesztő
- 40g édesítő
- 5g só
- 240g langyos víz
- 40g étolaj
Töltelék:
- 2 evőkanál kakaópor
- 5 evőkanál édesítő
- 40g olvasztott vaj/margarin
Elkészítés:
– Először az útifűmaghéjat beáztatom a 1510g langyos vízbe. Ez fogja a tojást helyettesíteni. A liszteket, sót, az édesítőt egy nagy tálba összekeverjük, belemorzsoljuk az élesztőt és végül hozzáadjuk a kocsonyás útifűmaghéjat, olajat és a 240g langyos vizet.
– A tésztát összegyúrjuk, dagasztjuk kevés ideig, majd 40 percig meleg helyen kelesztjük.
– A megkelt tésztát lisztezett felületen vékonyra kinyújtjuk. Olvasztott margarinnal megkenjük, a kakaóval megszórjuk, és szoroson feltekerjük. Az így elkészített rudat csigákra felvágjuk.
– Sütőpapírozott tepsire helyezzük a kakaós csigákat.
– 185 fokon 20 percig megsütjük, meglocsoljuk kókusztejjel és így sütjük tovább még 5-10 percig .
Az így elkészített csigák finom, puha állagúak lesznek. Nem fognak kiszáradni, főleg ha gyorsan elfogyasztjátok! 🙂
